Bachelor Finale and 7 Layer Dip

Who watched The Bachelor Finale?  You know I did!  So what did you think?  Were you as happy as I was that Brad chose Emily?  I just loved her from the beginning!!!  Her story of losing the love her life and finding out she was pregnant all at the same time just brought me to tears.   I admired how strong she was through her whole ordeal.   I love how she explained to Brad's family what being a Mom meant to her and how her daughter was such a rare gift in her life.  Her story certainly humbled me as a Mom.

I also really liked Chantal too.  I honestly wasn't sure a few times who he would end of choosing.  Chantal seemed to fit more of his "bachelor" lifestyle, although he may be finally ready to settle down which was what he had been saying all along.   I have to admit the "After The Final Rose" was a real let down.  I was so excited that Brad actually chose Emily, and then to find out that they are already having trouble.  I hope that they work it out and don't end up as another Bachelor couple that didn't work out. 

I decided last minute to have a few neighbors girls over for The Bachelor Finale.  My neighbor Kate and I have gotten together a few times this season so I decided to invite a few more neighbors over to join in the fun.  I wish I had taken a picture of all of us but had forgotten about it between all of the laughs and excited chatter.  Even though there were only a few of us, I decided to make a few munchies for the big night.  My new favorite dip lately is the seven layer dip.  I love anything Mexican and this dip is SO GOOD!  You can even make a healthy version by using vegetarian low fat re fried beans instead of the regular re fried beans.  I think they taste just as good if not better.

What You Will Need

  • 1 16 ounce can of refried beans
  • 1 8 ounce container of sour cream
  • 1 8 ounce container of pre-made guacamole dip
  • 1 cup shredded cheese
  • 1 package of taco seasoning
  • 1 large tomato chopped
  • 1 4 ounce can of sliced or chopped olives
  • 1 bunch of green onions, finally chopped

How to Make It

Layer the ingredients in a 9 x 13 glass pan or onto a nice platter with roughly 9 x 13 measurements.  I usually use a glass pie plate.  First layer is the re fried beans.  Spread them out to completely cover the bottom of the dish.

Mix the taco seasoning into the sour cream and spread on top of the beans. 

Then evenly add the guacamole dip, cheese, tomatoes, olives and green onions.  Chill for a few hours or dig right in.  Best served with Frito's Scoops or Tortilla chips.

Are you as excited about March Madness as I am?  It is a sure sign of Spring for me and is probably one of my most favorite times of the year.  I really get into the March Madness brackets.  When Jeff and I first started dating, we used fill out our brackets and then go to sports bars at night to watch the games.  It was so much fun!!  I take the competition very seriously and do a lot of research beforehand.  All of my diligent research in the past has actually won me three tournaments so I am up to the challenge of winning another one this year.  I am also so excited that Ohio State is a number one seed this year!!!!  So you know I will be cheering them on pretty hard this year.  Can you tell who I have picked to win it all this year in my brackets???  Go Buckeyes!!!

    I watched it with my hubby, bwahahaha! He's such a good sport! Although we only caught the last 10 min:) I totally forgot about it. grrrrrr

    I like Emily. Her story broke my heart as well.....

  2. This is my favorite dip ever! I pretty much always have the ingredients on hand for those last-minute parties. LOVE Emily and Brad too; I'm hoping they work things out!

  4. You had me sucked into this post with the title. Two things I love :) I also liked Emily. I was a little upset at her when watching after the rose. Where was her ring? I hope they make it work. Brad really seems to be in love with her, which is very sweet. The dip....Nom Nom. Great Post

  6. I liked emily- but hated her in the ATFR... I thought sh was bitchy. I think they're doomed!

  7. You know I watched too, love that show! I liked Emily, but was for Chantal. I just think it's good for a couple, especially a tv couple, to have that alone time before beginning a family. Plus the instant family has to be hard not only on Brad and Emily but her daughter as well! :(

    Sorry to see they're off to a rocky start...thought she seemed so different in the After show.

  9. I was rooting for Chantal, just because I thought of her as a much better fit for him and his lifestyle and line of work.

    But, he chose Emily and my my, sweet little Emily isn't so sweet anymore! After watching ATFR I was sure her cute little body and sweet little accent weren't enough! I don't think they will last, already having knock down drag out fights over the phone, she seems way passive-agressive!
